An uncomplicated meal – Spinach & Prawns stir fry

I was reading an article about how we complicate our life so often, and it made me realise that it is, in fact, true. We do make our lives complicated by having too many expectations from not just life but also people who are a part of it. And it is also the same with food, isn’t it? In the quest to keep up with what is fashionable in the culinary world, we forget the simplicity and wholesomeness of food that is not complex.

Food that doesn’t take much effort to be put together both with the number of ingredients or the time taken to cook. Food that is so fresh and so delicious that it makes you wonder why do you bother cooking elaborate meals at all. Food that is effortless and makes you so happy that it makes you think “why the hell did I not make this before?”

This Spinach & Prawns stir fry is that uncomplicated meal for me. It takes less than 20 minutes to cook and tastes so deliciously fresh and tasty that it is my new favorite dish. You can substitute the Prawns with shrimps and it will taste just as good. A must have for days that you want to keep it simple.


Recipe – Serves 2 (Cooking time 20 minutes)

One bunch of Spinach chopped

200 gms Prawns peeled and deveined

One tsp fresh Ginger & Garlic paste (Do not use bottled paste)

Two tsp Mustard Oil

½ tsp Turmeric powder

½ tsp Red chilli powder

Salt to taste

One tsp Nigella seeds

Boil water in a large bowl and add the Spinach and let it cook for 10 minutes. Drain all the water in a colander and let the Spinach cool.

While the Spinach is cooling heat the Mustard oil in a pan. Once the oil reaches smoking point add the Nigella seeds & ginger garlic paste.

Add the Prawns and cook for a few minutes. We don’t want the Prawns to overcook; they have to be juicy and tender.

Add the Turmeric and Red chilli powders and mix well.

Press the Spinach in your palms and drain all the water. Add the Spinach in the pan and saute well.

Add the Salt to taste and cook for 3 -4 minutes as long as the prawns are done.

Serve hot with a Dal & Rice or with Rotis.
