Get your Green fix with some Parsley Pesto -

I love the color Green. For me it is the color of life, the color of hope and growth. It symbolizes nature and everything that moves ahead and is very soothing and pleasing to the eye. Similarly it is also good for our tummy as greens are full of fiber and nutrients. And I make sure we have our Green fix almost every day.

And thankfully I have a overgrowing Parsley plant in my garden that is my savior in most situations as I use it to make soups, salads, dips and dressings. Parsley doesn’t only taste good it is also a flavor of several Vitamins and antioxidants. One of my favorite use of Parsley is to make a very fresh and tangy Pesto, which I use a sauce on Grilled Chicken, Fish and sometimes even roast vegetables.

It takes less than 10 minutes to make and is something the husband loves as well. Here is my recipe for Parsley Pesto which in this case I served on grilled Chicken and roast vegetables.

Recipe (No cooking required, takes 10 minutes)

1 1/2 cup fresh curly leaf or flat leaf Parsley

1/2 cup Walnut (you can use Almonds or Pine nuts instead)

2 Garlic cloves

Salt & Pepper to taste

Olive Oil to make the Pesto (use really good quality Olive Oil)

Juice of 1/2 a Lemon

1) Wash the Parsley and drain all water.

2) In a grinder add all the ingredients and a little Olive Oil and blitz everything. If you find it hard to grind the paste add more Olive Oil as you go.

3) I love to get some Walnut pieces in my Pesto I don’t grind them too finely.

There you go fresh Parsley Pesto is ready. You can add some Parmesan to it as well but since I was going healthy I did not use it. Also adjust the Salt or Lemon juice if needed as per your taste.
