Plot: Once upon a time in a house far far away, there was a dough that was made especially for Bhature by a chubby Punjabi. The dough made with Flour & Semolina brought together with curd was happily used in a sizzling item song which was shot in a pool of hot oil. After its part was over, the left over dough got banished in the deep confines of the fridge where it waited with bated breath to meet the dustbin in a few days.
Ab Kya Hoga is dough ka? Isse dust bin se kaun bachayega (the camera zooms into the dough a few times at this stage with background music)
The Twist: Next to the dough, there was also a bowl of leftover Chatpate Aloo, that had played a part once in a movie involving Capsicums. The Aloo looked at the poor little dough sitting quietly shedding tears of doom, and something in it just made it reach out to the dough. And somewhere in a dark, cold corner of the fridge, a love story started to blossom. They promised to never be apart and rot together so that they can be in the bin forever.
The End: The chubby Punjabi found out about their passionate affair when she found them kissing behind a jar of pesto. She was so moved by their love that she decided to get them married. She invited a delightful chickpea curry which came along with a spicy mint chutney to make the union complete. The Boondi Raita that was asked as an after thought added some simplicity in the otherwise over the top marriage and an exorbitant sum was paid to the Radish salad for an item number called “Mooli ki jawani.”
So amidst all this fanfare the dough was stretched and pulled in the presence of some dry flour and filled up with Aloo. It looked so beautiful that it had to be decorated with Nigella seeds because kahain nazar na lag Jaye. Shallow fried gently on both sides in a pan the Dough and Aloo became complete, and they went on to live happily ever after in someones’ tummy.

Stuffing for the flatbread:
4 potatoes boiled and mashed (you can use paneer or tofu instead of potatoes as well)
1 1/2 Tsp Turmeric powder
1 Tsp Red chili powder
Salt to taste
2 green chilies finely chopped
1 tsp cumin seeds
Freshly chopped Coriander
2 tsp vegetable oil
Nigella seeds or Sesame seeds
Oil for shallow frying
Heat oil in a pan and add the cumin seeds
Add the mashed potatoes and mix well.
Add the masalas and green chilies
Mix well and cook on a low flame for around 10 minutes
Add the chopped Coriander
Turn off and cool completely
Making the Kulche:
Divide the Bhature dough into medium sized balls (I prefer using the dough which is a day old, as the curd in the dough gives it a delicious tangy taste)
Take a ball of dough and roll it a little
Add some stuffing (had to be cold or the dough will split). Use your judgment and ensure the stuffing is not too much or too little
Roll it into any shape you want
Dip your fingers in water and gently press the rolled out flatbread on one side and sprinkle nigella seeds or sesame seeds on top.
Heat oil in a pan and add the flatbread
Cook on both sides till golden and cooked
Serve with chickpea curry, mint chutney and salad
