Summers are here because oh my God is it hot today or what? And since eating anything feels like a task, I am gulping down glasses of this chilled beetroot lassi.
Everyone knows how much I love my beetroot raita, so it is natural that I also make a sweeter version of it. If you are worried about the overpowering taste of beetroot, don't be because you can barely taste it. The bright pink drink looks really pretty and everyone enjoys it.
Easy to make and so delicious, once you make it, I promise you will make it again.
Ingredients:
2 cups chilled full fat Greek yogurt
1/2 cup chilled milk
1/2 cup water
1 medium sized beetroot
Sugar as per your requirement
A few ice cubes
Almond flakes & rose petals for garnish
Method:
1) Roast in the beetroot in the oven, covered in an aluminum foil for 45 minutes at 180 degrees C. Alternatively you can also boil the beetroot.
2) Peel the skin off and let it cool completely before chopping it into small chunks.
3) Add the beetroot and the sugar in a blender and blend. Then add the yogurt, milk, ice cubes and water if necessary and whiz for a minute or two till everything is blended. Note if you find the lassi to be too thick, please add some water or milk and blend again.
4) Serve chilled garnished with almond flakes and rose petals.
