We love our snacks don’t we? I mean when we are not having breakfast, lunch & dinner we are having a snack. I made these delicious Mushroom & Corn Quesadillas using Katoomba Parthas a few days ago and we loved it so much that we finished 5 whole parathas between us.
You can substitute the Mushroom & corn with Chicken or Prawns too and it will taste just as good. The star is clearly the crispy, flaky paratha that is ready in less than 5 minutes and makes for a perfect & filling snack.
Ingredients:
4 - 5 Katoomba Parathas
1 large Onion finely chopped
1 cup chopper Shiitake or Button mushrooms
1 cup Corn kernels
½ cup chopped Coriander or Parsley
Mozzarella Cheese
1 tbsp Curry powder
salt to taste
1 tbsp vegetable oil
Method:
Heat oil in a pan and add the onions.
Saute till translucent and add the mushrooms. Cook for 5 - 7 minutes and add the Corn.
Add the salt, curry powder and coriander.
Mix well and cook till the mushrooms are done.
Unwrap the parathas and heat them on a hot griddle till lightly cooked on one side. Place the mushroom filling and cheese on one side of the paratha and fold it. Cook on a low flame till the paratha is crispy and the cheese has melted.
Serve hot with your favorite sauce.
