Ridiculously easy “Spinach and Sweet Potato fry” made under 20 minutes it combines the goodness of Spinach and Sweet Potatoes it makes for a fabulous accompaniment to any of your meals. The sweetness of the potatoes oddly works beautifully with the spinach.

I love eating this dish on its own with a big helping of curd. Such an easy and fuss-free meal to make. Don’t you agree
Here is the recipe:
3 -4 cups chopped and washed Spinach (you can substitute it with Kale or Silver Beet)
3 large Sweet potatoes, cut into bite-sized pieces (you can use potatoes if sweet potatoes is not your thing)
2 cloves of Garlic finely chopped
1 tsp cumin seeds
Salt to taste
1 tsp red chili powder
1 tsp turmeric powder
1 tsp cumin powder
1 tsp vegetable oil
Heat oil in a pan and add the chopped garlic and cumin seeds
Add the diced sweet potatoes and cook till tender
Add the chopped spinach and all the masalas
Cover and cook for a few minutes till the spinach is tender
Eat on its own or serve with hot roti
Tip: If using Potatoes add 1 finely chopped tomato as well to give the dish a bit of a kick.
